Paula Deen's Lean: Chicken Divan

If you are looking for a way to get your healthy greens, perhaps a little broccoli, without realizing you are eating it...then you are going to love Paula Deen's Chicken Divan. This dish smothers this vitamin-packed veggie with cheese, chicken and creamy goodness. It is what I like to refer to as a "delish-dish". Here's what you need to do to make it lean...


CHICKEN DIVAN
Serves  8



INGREDIENTS:
2 (10-ounce) packages frozen broccoli, chopped
6 cup chopped chicken, cooked
2 (10 3/4 -ounce) cans 98 % FAT FREE condensed cream of mushroom soup
1 cup Hellman's Mayonnaise Dressing
1 cup FAT FREE sour cream
1 cup grated 2 % sharp cheddar cheese
1 tablespoon fresh lemon juice
1 teaspoon curry powder
salt and pepper, to taste
1/2 cup dry white wine
1/2 cup freshly shredded Parmesan cheese
8-10 crushed Reduced-Fat Ritz Crackers



DIRECTIONS:
Preheat oven to 350 degrees.


Remove the outer wrappers from the boxes of broccoli. Open one end of each box. Microwave on full power for 2 minutes, until thawed. Drain the broccoli and put into a casserole dish. Add the shredded chicken.


In a medium bowl, combine the soup, mayonnaise dressing, sour cream, cheddar cheese, lemon juice, curry powder, salt and pepper to taste, and wine. Whisk together to make a sauce. Pour the sauce over the broccoli and chicken. Mix well with a spatula.


Place the mixture into an 11x7-inch casserole dish or two 9-inch square disposable aluminum foil pans that have been sprayed with vegetable oil cooking spray. Pat down evenly and smooth with a spatula. Combine the Parmesan cheese and crackers and sprinkle over the top.


Bake for about 30-45 minutes

RESULTS:

This dish turned out really well. The entire family liked it, including the little one who is only 18-months-old. People of all ages are sure to enjoy this dish and the cooks will enjoy making it too. The recipe is easy to follow and takes about 10 minutes to prep. This makes for a quick and easy weekday dinner.     But boy, even with the substitutions, this is certainly lower fat, but it sure doesn't sound low fat. And I have had bad luck with no fat sour cream, tends to separate on me... did you have any problem like that, what am I doing wrong to keep it from happening?

  4. I will definitely try this - though ALL my boys do NOT like cooked vegetables - go figure! (For full Paul flavor, you ought to revise your intro above to say instead of "Hey" to say "Hey Y'aaaAAALLL" LOL! Give me a little Paula, a little Giada, a little Barefoot Contessa and the Neeley's Deep Fried Hot Wings - and you got good cookin' goin' on ---Y'aaaaAAAAALLLL!

  6. Hides the broccoli, huh? We'll just see about that... Broccoli ooks me out. The hubby will eat it just fine but I'm a little more picky. Maybe I'll just have to put this dish to the test!! :D
